new additions.

I am fully aware that I haven't been blogging as much.

The truth is, our life has really changed in the past week.

Tyler and I are now parents.

Parents to two handsome 9 week old kittens!

Last week Tyler and I came across the Hudson Valley Animal Rescue and Sanctuary. We fell head over heels in love with these two brothers. I picked up Barley (the grey one) and Tyler picked up Rye. We immediately started the adoption process and took them home the next day.

We named then Barley and Rye due to our beer theme. Our fish is named Hoppy (my favorite beer characteristic) and our future dog's name Porter... Are we ridiculous and corny? Yes. Do we care? Not at all.

I am so in love with them that I am afraid what it will be like to have a human baby. SO MUCH LOVE!

They are so curious. They wrestle and play with each other until they fall asleep. Speaking of sleep, they snuggle together and lay on my chest at night. Precious little things, they are.






Other than our fish. These two are our first kids we've ever had apart from our childhood pets. I can't even imagine my life without them. Adopting an animal from an animal rescue is very rewarding and I would hope everyone would do it sometime in their life.

In celebration of fall and this cold cold weather permitting me to wear sweat pants, Tyler's warmest socks, a long sleeve shirt and a coat on top of that just to keep warm in our apartment, I baked a little something. A little something with pumpkin!



Pumpkin Apple Bread

Need:
1 cup pumpkin puree
1 granny smith apple, peeled and small diced
1/2 cup brown sugar
1/2 cup sugar
2 eggs
1/3 cup canola oil
1.5 cups flour
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1 tbsp pepitas (pumpkin seeds)

Do:
Preheat oven to 350 degrees f
1. Combine all of the ingredients, (except pepitas) in large bowl. 
2. Evenly pour into a greased and floured loaf pan
3. Sprinkle on the pepitas 
4. Bake for 50-60 minutes. Allow the bread to cool completely. 

Enjoy with a cup of coffee or tea. 

I am currently writing this post with Barley on my lap half way on the lap top and Rye in my jacket up against my stomach. I could melt.
