Pumpkin Hemp Breakfast Cookies



Here it comes ladies and fine gentleman. THE PUMPKIN RECIPES. I had some leftover pumpkin from my last recipe... so of course I had to make something else. I flexed my balance muscle and made something pretty darn healthy. 

These cookies probably shouldn't be considered cookies, but they're filled with oats, they're round and they're baked...so they are cookies. However, since they are so healthy...I am calling them breakfast cookies!

Hemp seeds, flax seeds, chia seeds, almond flour, no additional fats... I mean as healthy as you can get. 




They are smashing with a cup of coffee.

Pumpkin Hemp Breakfast Cookies

Ingredients:
2 cups quick oatmeal
3 tbsp hemp seeds
3 tbsp flax seeds
3 tbsp almond flour
2 tbsp chia seeds
2 tbsp honey
2 tbsp brown sugar
1 cup pumpkin
1 egg
1 tbsp corn starch
1 tsp cinnamon
1 tsp vanilla
1 tsp baking powder
1/4 tsp salt

To do:
1. Combine all of the above ingredients
2. Roll into 1-2 in balls. Place onto a lined or greased baking sheet
3. Bake for 12 minutes in a 375 degree oven
