Blueberry Lemon Coffee Cake

Last night at 9pm I got up from my bed, turned on the kitchen light and decided to make Tyler an extra special Monday morning breakfast.

I had zero game plan, zero recipe and barely any ingredients needed to make killer muffins or scones.

I pulled out everything in my pantry and fridge that seemed bake-worthy. Blueberries, a lemon, butter, almond milk, low fat vanilla coffee creamer, flour, sugar, salt, an egg and baking powder.

I began adding all of these things into a bowl. Mixing, stirring and pretending to know what I was making.

Now would you believe that I ended up making a Lemon Blueberry Coffee Cake that knocked my own pants off?

It's true! And it tastes just like the low-fat blueberry coffee cake from Starbucks. Now you never ever have to go buy that from Starbucks again!

In conclusion, I am not a baker. I went to the Culinary Institute of America for culinary arts, not baking and pastry. However, I just made a coffee cake that sort of makes it look like I did.
