Foodbuzz 24x24: An Indoor Picnic

I am thrilled to announce that the great folks at Foodbuzz chose me as one of the 24 other winners to participate in the Foodbuzz 24x24. Basically, Featured Publishers submit an idea for a dinner party. Out of the many people that submit ideas, they choose 24 people to execute their idea all within the same 24 hours. 24 meals in 24 hours! I love the spring and especially the summer, so when I began brainstorming for the 24x24, the first thing that came to mind was that it was February, cold and deary. 
I have been craving  warmer weather and the beauty of spending most of my time outside.
        To bring a little glimmer of summer into the winter....I came up with: 
An Indoor Picnic

Life needs more picnics. Why? Because picnics are relaxing, simple and you can lay down while eating...

 I look forward to summer every year because I know I’ll be having a lot of picnics. Laying out a blanket, packing a lunch with the essentials, bringing a boom box to listen to music and soaking in the summer sun.

Well, folks. You don’t have to wait any longer to enjoy a picnic.

Benefits of an indoor picnic:
1.     The weather forecast does not matter
2.     No need to pack the picnic, just carry it right into your living room!
3.     Easy clean up
4.     No need to drive anywhere
5.     You can have a picnic anytime of day
6.     Ants, insects or birds are not invited to the indoor picnic party
7.     It can be quite romantic

My boyfriend and I created an indoor picnic that blew our socks off.

The aftermath.....

Bringing the picnic indoors can be just as lovely as the outdoor kind. Sitting on the floor with a blanket, listening to music and enjoying homemade food was the perfect way to spend our Saturday afternoon and evening.

How to Create Your Own Indoor Picnic:
1. Make a picnic feast inspired by summer
2. Layout your favorite washable blanket
3. Spread out newspaper for extra spills
4. Create a playlist of your favorite songs to play during your picnic. I suggest a combination of Ella Fitzgerald, Bon Iver, Bebel Gilberto, The Kooks and Frank Sinatra 
5. Eat slowly and enjoy every moment
6. Plan your next picnic while cleaning up your first one.


Spiked Sparkling Lemonade

2 cups of Seltzer
4 oz Absolut Vodka (or any vodka of your choice
2 sliced lemons
2 tbsp sugar

1.     Place lemons and sugar in a jar
2.     Muddle with a back of a spoon
3.     Add vodka
4.     Add ice
5.     Top with seltzer
6.     Garnish with a slice or wedge of lemon
Rosemary Aioli

 1 cup vegetable/canola oil
1 pasteurized egg yolk (at room temperature)
1 teaspoon grainy mustard
1 sprig of rosemary
Salt to taste

1.     In a blender or by hand, quickly and slowly drizzle oil into the egg yolk and mustard until the mayonnaise is thick and creamy
2.     Add chopped rosemary and a large pinch of salt
TIP: If mayonnaise breaks or does not become thick: crack another egg yolk into a new bowl and slowly whisk the broken mayonnaise into the new egg yolk.


1 cup water
2 ¼ tsp active dry yeast
2 tbsp sugar
¼ cup olive oil
1 tbsp salt
3 ¼ cup flour
1. Combine warm water, yeast and sugar in a bowl let rest for 5 minutes.
2. With your hands, or Kitchen Aid with a dough hook, incorporate the flour, olive oil and salt.
3. Knead for about 8-10 minutes until your arms are sore...haha until it forms a lovely ball.
4. Cover in a little oil, place in a large bowl and cover.
5. Let rest/rise for 45 minutes.
6. Remove ball from bowl and place on a greased cookie sheet.
7. Poke the dough around to form a square shape.
8. Use your fingers to push down the dough.
9.  Drizzle with olive oil and grey salt or sea salt
10. Cover the dough with plastic wrap and let rest for 15 minutes.
11. Bake at 400 degrees for 20 minutes.
12. If it isn't golden brown, broil it for ONLY A FEW SECONDS.
13. Slice into 4 squares and then in half

Focaccia BLT

6 strips thick cut bacon
1 large ripe tomato
Rosemary Mayo
3 pieces of butter lettuce

1.     Assemble sandwiches
2.     Eat Immediately :)

Avocado & Kale Salad

3 cups torn kale
½ cup of cherry tomatoes sliced in half
3 tbsp thinly sliced red onion
1 ripe avocado

1 teaspoon honey
1 teaspoon red wine vinegar
2 tablespoons extra virgin olive oil
Juice of half a lemon
Large pinch of salt

1.     Combine all ingredients in a large bowl.
2.     Toss with dressing and allow the salad to slightly wilt in the fridge for 30 minutes up to 2 hours.
 Flourless Peanut Butter Cookies


¾ cup All Natural Peanut Butter
½ cup granulated sugar
1 egg
1 teaspoon baking powder
½ teaspoon salt (unless the PB is salted)


1.  Preheat oven to 375°f
2.  Mix all ingredients together
3.    Roll 1-2 inch balls and slightly smash them into a disk
4.   Place on a parchment-lined sheet tray
      5.  Using a knife, create a cross hatch on top of each cookie
6    6.     Bake cookies for 10-15 min
7    7.     Allow to cool completely

Simple Jam Ice Cream

1 pint of vanilla ice cream
1 cup of your favorite jam (I used low sugar raspberry jam)

1.     Mix ice cream and jam together.
2.     Place ice cream back into the freezer to become firm
 Peanut Butter and Jelly Ice Cream Sandwiches

To assemble Ice Cream Sandwiches:
1.     Scoop ice cream onto one cookie and sandwich the other cookie on top.
2.     Sprinkle crushed peanut around the edges
3.     Place back into the freezer for at least 30 minutes
